I made this amazing soup tonight with huge, garden-fresh yellow squash and vegetable bouillon. I made the 2 x recipe by roasting the squash halves and then scooping out the seeds. This recipe surprised me by how simple it is to make and how delicious it is! I needed a lot of basil, so I used sweet Italian, red ruffled leaf and Thai basil from my garden. I used an emersion blender, so easy! I’ll be making more and freezing it for the winter as I have more gigantic squash! Thank you for this yummy recipe.
