In reply to suzanne. Hi Suzanne- great question! According to the North American Olive Oil Association "Extra virgin olive oil has a smoke point between 350 and 410 degrees Fahrenheit. But if you do a lot of cooking on high heat, you may wonder, "Do I need to worry about the smoke point of olive oil while cooking?" The answer is no because smoke point is not a good indicator of a cooking oil's safety when heated." Hope this helps!

Hi. I thought the smoke point for olive oil is 350 degrees, so I never use higher heat when using it?

Looking forward to trying this tonight. For the Middle Eastern version, would you use sumac with the coriander and cumin? Or in lieu of?
