Wife can’t handle carbonated so I just skip the second fermentation, right?
I love fizzies so I can make it separately. I used to make kombucha and it had great fizzies.

This can be due to low minerals in the water. You can add mineral drops or sometimes a pinch of good sea salt or real salt will help.
