Super flavorful and so easy to adapt to ingredients I had on hand! I par baked my large zucchini for about 7 minutes before filling and then baked another 10 mins once filled.

Easy to make and super tasty. Added quinoa to the filling. The zucchini looked to be the same size as your recipe photo but mine took considerably longer to cook. I will be making this one again.
