They are great. Was sus about the tahini and olive oil so used crunchy almond butter and coconut oil instead. Apricots for dried fruit. Light brown sugar. Weighed the flour and sugar. No problems with dough not sticking together. Baked for 5 mins longer.

Hi Carol, You do have to really pack them in- a cookie scoop is very helpful. Not sure if the Bob’s Red Mill flakes are extra thick? Perhaps you could swap out 1/4 cup wide coconut for shredded coconut, it might help in binding. Also could put a lid on while flakes are soaking and leave them for longer.

( I tripled it.) It was wonderful! and I received about 8 separate compliments. People thought it was absolutely fantastic.

My notes: I made the dressing several hours ahead so it could deepen flavor. I used slightly less salt than called for (knowing I could add more later) but it didn’t need it! I used a bare fraction of the optional chili flakes and thought that was the perfect amount. I chose the maple syrup option as the sweetener and the rice vinegar. I was shocked at how good this recipe was exactly as written. So frequently I have to do a bunch of tweaking at the end of a new recipe to make it to our taste, but this one was 95% perfection for us. Thank you so much for making 18 people think I’m a great cook! Lol
